Debloater stops apps from running and renders them invisible - It will not delete so at any time you can unfreeze or unhide them, If you do go down the Debloater route then freeze the update centre app as for updated Sony apps see here then once downloaded transfer them to your phone and install via your filemanager app
Have you tried to update your firmware via Pc Companion or try clearing cache and data for the update centre app via Settings - Apps and swipe to All then locate and open said app and clear the mentioned items then reboot and test - or unofficial methods allow you to disable the app via a program called Debloater
