Just download and install a keyboard app of your choice (like Gboard or others) and set it as your default input method when you run it for the first time.
If you already have multiple keyboards installed, you can change the default one by going to Settings -> System -> Language & input -> On-screen keyboard -> Manage keyboards -> enable only the keyboard you want to use and disable the rest.
