Lollipop added a "Restore from a Previous Device" option to the device setup, but Sony's unnecessary setup app seems to make it unavailable. Is there any way to access the default Lollipop setup or at least the restore from previous device? Why would Sony replace the onboarding process....

Is your phone already configured? You have Tap & go in the intial setup guide when you start the phone for the first time (or after a master reset).

Here's what i see in 23.4.A.0.546 after a master reset (it's now the 4:th step since i've inserted a SIM):

And if i tap "Get started" i see this:

But in my experience (perhaps it's just the apps i use), very few apps actually uses this backup feature.

But the Tap & Go only works if you have access to the old device. If you loose it or if it breaks, it is not helpful. What is missing in the Sony setup, but available in original Lollipop, is the next page (skip Tap & Go), where one can restore settings directly from Google's servers. In that case, it is possible to select from which other device you want to restore as long as it has used the same Google account.
