OK the market place is vast so give us an idea of what sort of apps you are looking for....
For sms I use Handcent SMS & also use SMS Backup and Restore
For email I use K-9
For Twitter I use Touiteur
For quick finding of contacts I use Gesture Search
For a launcher I use ADW alongside Home Switcher
For managing my apps in general I use Appbrain app on my phone
For file managers I use both Astro and Linda
For calendar I use Jorte
For music I have both Zimly and MixZing

If you're loving the camera of this phone, you might want to download the camera effects in the market that will allow you to zoom in and out.

Winamp have just released their version of music player for Android that allows you to make playlists on the go and use your exsisting Itunes playlists aswell but you must have upgraded your phone to Android 2.1 to use this.
MixZing, Winamp, Zimly and TuneWiki are all music applications that are free (or have free versions) and which allow you to make your own playlists. I tend to use TuneWiki to create playlists and the stock music player to listen to them. As they are all free, try them out and see what you think of each one. There is also a music player called PowerAMP, which some poeple love. It seems to have a facility for creating playlists, but as far as I have been able to work out so far, they can only be played within PowerAMP, whereas the others allow you to play the playlists using other music player applications.
Oh, and another application that I don't think anyone has yet mentioned is Barcode Scanner. Youb sometimes see links to applications and so on with a square barcode (I think of them as being Japanese, but might be wrong) and by scanning the barcode with the phone, you can download them straight to your phone.

I'd say Task Killer is something all android phones should have, really helps control battery life consumption.
