now i'm rooted under .62 official, i'd like to know if i can uninstall without problem those apps that i don't use :

First of all, copy all apps of system/apps/ to a folder in SD card because you may need them in future, and it works as a backup
then to remove bloatware directlly delete them from system /apps/,,,
You can use any app that allows you to do so, root explorer, titanium backup etc

How did you root .62? Is the bootloder locked?
you can downgrade to .42 root with SuperOneClick then update to .62 OTA
DOes this leave the bootloader locked?
yes it won't affect the bootloader at all
if you find the .42 ftf files this is how to do it
Xperia Ray ST18i/a 2.3.4 update 4.0.2.A.0.62
Arykala : hope Uliwooly method works for you,
for my part i was not able to downgrade to .42 with FlashTool until i unlocked my bootloader, but unlocking your bootloader you can directly root your .62, that's what i done...
