As @alexdon mentioned, it does sound like you an event activated in the Smart Connect application called "Music on the go" or "Music at home" and to stop the Music application from starting up automatically you will need to deactive these events.
To do that, open up the Smart Connect application in your phone > Tap on "Events" and disable both "Music on the go" and "Music at home".
Now the music application should not start by default when you connect your headset to the phone so you don't get interrupted.
