Up until the newest system update I had to choose 4k video mode when taking a video in 4k, now it doesn't give that option, and when I take a video the gallary doesn't show the video is in 4k, and I can't find the option to record video in 4k?

Check video settings. It has been embedded there, as it should have been in the first place. 

So, it's there. 😉
