I've tried using 3 different applications that do screen mirroring/casting, and every single one of them has caused a crash with the error message "Unfortunately, System UI has stopped." I've done a factory reset and still get this. Is there some fix or is Sony's UI just incompatible with screen casting?
Well, I first got the error trying to screencast my phone to the linux based head unit on my car. I tried two different apps (not from the Play store) and got the same error where the UI would crash as soon as I tried to toggle on screensharing. I then downloaded an app called LiveScreen (from the play store) and got the same error leading me to believe there is a fault with the phone or its software.

Have you tried mirroring to any other device, or just the car audio? It would be useful to know if the error occurs on anything else.
The LiveScreen app streams within a WiFi network (viewable from any internet browser within that network). I've tried using that and it causes the same error.
@threebisc, what about with the pre-installed apps? Can you start your device in safe mode and see if the problem persists?
As far as I can tell, the pre-installed screen casting apps on this phone require specialized hardware which I don't have, and can only cast to specific, compatible devices. The idea is that I want to use third-party apps to screen cast platform-agnostically, i.e. to devices like the head unit on my car, or to the browser on my computer. People using other Android phones like the Nexus 5 have done the same without any such System UI crashing issues. Based on this, it is my assumption that there is something inherent to the Sony UI that is incompatible with these third party screen-casting solutions. Is there anything I can do to try and fix this issue or am I out of luck?

At this point, because it is a UI error, I recommend you try a software repair.
