The proximity sensor should lock the screen as its close to your ear, make sure that you are actually touching the screen (ear) if you don't then the screen wont be locked.
That is not normal at all, it should only go into slow talk if enabled and not automatically. Please attempt a firmware update/repair to potentially resolve this:
1. Download the PC Companion software from http://www.sonymobile.com/gb/tools/pc-companion/
and install it on your PC.
2. Install and open PC Companion then select Support Zone.
3. Phone Software Update.
4. Start.
5. Repair Phone
6. Continue
7. Accept data removal
8. Next
9. Wait for prepare
10. Select Phone
11. Follow the connection steps

I bought my x1 last friday and I delayed to find what's were happenning with the mobile. I realised that's it's exactly the trouble reported here but in my case, shut down the phone didn't solve the problem.
If you have checked that the option is not enabled, have you tried the repair as above?
