Well done sony.

I had a james bond theme on the phone,.

Well that's now gone, have the photos but no theme.

Contact list, phone etc went from white text on black background to black on white, harder to read, it want to choose settings

Undid my security lock on the phone.

Now I get some dopey home page picture of a prairie.

How do I get rid of this update?

wasn't the james bond theme nothing but a wallpaper?

you need to use a different messaging app and/or phone app as there isn't a way to change the background color.

elaborate on the "security lock" if its the password or pin just re-add the pin/password.

you can change the wallpaper to james bond.

you have 2 options to downgrade

1) take it to a sony repair center

or

2) use flashtool

No it was a theme, it was in the theme list it's now gone.

I created my profile the way I wanted it.

Much the same way my phone was set up the way I wanted it.

Now my profile has changed without my being asked, and a software upgrade was forced on me that changes or removes items from my phone that was set up the way I wanted.

yes and no, the theme is still there, it was black and gray if I'm not mistaken (for the menu windows) and the homescreen had james bond wallpaper, just select Quartz and then change the wallpaper with the james bond picture and voila.
