With my z5 compact I use multiple headphones and the bluetooth headset I got with my z3 compact. If I get a call the ringtone sounds through my headset and I have to talk through my headphone microphone when I pick up.
Is there an option to have my phone ignore headsets for calls and notifications?
So I want to be able to make calls using the phones own microphone and speakers without unplugging my headphones or setting it to speaker.

Welcome to the community.
I can't find a setting in the phone that will allow you to do that. You might have to use a third party application from the Google Play Store. I think SoundAbout may be able to do this, though I haven't tested this specific functionality for it.

You may want to uncheck (Use for) call audio in your bluetooth settings/paired devices and then select your headset device.
I had this exact same problem!
But I have jsut discovered that you can still use your own headphones (plugged in). The phone will use the microphone on the top of the phone for calls, not the bottom! (it uses the bottom one for noise cancelling).
I found this quite weird. As the usual pattern is for the active mic to be on the bottom when using non-miced headphones plugged in, for calls.
