I keep catching the camera button on the bottom right hand edge of the phone and it's really getting on my nerves. It keeps wanting to take photos when I don't want to. Can I disable the button?

I just tested this is a Xperia XA and I could see the menu in all 3 modes, manual, auto and video.
You are not able to scroll down further in this menu, or have you reached the end of the menu on the screenshot that you posted?
Can you see the option if you follow the instructions that @alexdon suggested? Did you try clearing the data for the app? If you haven't done that I would recommend trying that.
Also if you could go in to Settings > Developer options > Animator duration scale, set this value to 1x if you have changed it something else then default.

Haha! Didn't realise I could scroll further! Thought I'd tried, but obviously hadn't! Sorted now!

I can't seem to get rid of the predictive text facility.
I'm afraid there is no option to turn this feature off.

Seriously? You can't disable predictive text? I've had cheap and nasty phones that allow you to do this!
I'm sorry if i misunderstood your question. 
Are you referring to the bar at the top of the keyboard or just autocorrect? The bar isn't removable but you can turn off autocorrection if you go to Settings > Language & input > SwiftKey Keyboard > Typing > Typing & autocorrect > turn off the option "Autocorrect".
If you are referring to the bar I would recommend downloading another keyboard application from the Google Play store to see if that one suits you better.
