On my Z5 compact there is 2 ways to backup phone and 2 ways to remotely find the phone.
Why is there 2 options (Google and Sony)? What is the difference?

Well, all phones have the google options as default because of android. And then, the phone maker inserted their own. Like you said, for sony there is android device manager and myxperia.
But that is the difference?
Why have Sony added their own "find my phone" and "backup"? Because Googles solutions is missing something?
I have no idea, perhaps they had them developed and just added them. Ask your Local support.

As @alexdon said, the Android device manager is a native part of Android.
My Xperia is our version of the service so users get a similar experience but we have added a few points of difference. For example the biggest advantage is that the Xperia Z5 series has the my Xperia Theft Protection function.
Should I use both backup and find my phone or just that Sony has made?
You can use any of them, but I suggest you to backup media files manually.

Because creating a dbk file (backup) that holds media too will only take more time to create and afterwards to restore. Not to mention about the size (which can grow up to tens of GB) related to how many files you have.
