There is no way to adjust the sensitivity of the camera key in your phone, you can however change which action is triggered when pressing the camera key in order to avoid photos being captured by mistake. In order to do this, open the camera app > Tap the cogwheel-icon > Tap "More" > Tap "Launch with camera key" > Choose "Launch only" or "Off".
