Will the ICS update through the PCC when it does arrive in Xperia U wipe out all my data, music and apps from memory? What happened with PCC updates of Xperia S for ICS?

no, the apps will be gone, you will have to re-download them from the market, same with games, unless the app and games came pre-loaded with the phone.

So will the apps have to be reinstalled or they will be fine, just the settings will be gone?

But the app itself will remain right? worried for the large games I downloaded, if I have to get them again it would be quite a bit of data usage. but if only the settings and scores go away, then its fine.

Well that was my query exactly. Thanks for answering. Btw do you own an Xperia U? Wanted to have a discussion if we should really update it. I have some free time in my hand and am reading in depth about the android scenario for last 2 days. Cant really decide to update or not.Can we backup the apps in any way without rooting? Is the ICS really worth all this?
from the 2012 Xperias I have the Xperia S, you can use the link bellow to backup your phone, but you don't backup the app itself but a list of apps that you have so you will have to redownload them but it'll be a lot easier as you just have to tap on accept
