What hapend to Black?

After one of the latest updates my phone changed the design of black on the display from the "normal" black to a light gray with a little shading effect.

How can I change that back?

Hi @Lahmy, welcome to the community.

You should be able to change to the default 'Black' theme under Settings > Themes.

It's not the design, which changed, it is the color of most of the usually purely dark parts like the scroll down menu and some other symbols which are now slightly brighter then before.

I am not sure exactly what you mean. Could you please provide a screenshot?
