Hi can someone help me about noise cancelling setting of my phone. I cannot enable it nor click the setting I don't know why. I also have a headphone with noise cancelling.

the setting to turn on the Noise cancelling in device is only for the noise cancelling headphones by sony that uses the in device noise canceling hardware.

ZX770BN Noise-Canceling Bluetooth Headphones
That's my headphone and yet I can't activate the noise cancelling setting of my Sony xperia z5 premium. Can someone help me?

If you want to use NC you have to use wired headphones, if you want to use the NC feature on your bluetooth headphones

it will work for music but not for calls.
